@judipoker Ha, thanks for solidarity re: kids' diet. Whatever is exactly right-- they're growing and loved, right? My son has some challenges that I can't fix and I remind myself that loving him is my primary responsibility and that the rest is fine, pasta/carbs are FINE, wearing any clothes...

@bigmarky I am seriously going to do all of these instapot things. I really thought it was just an appliance taking up space and almost gave it away a few times. Thank you so so much. This sounds delicious and like the chicken I used to put in tacos back when I was like chopping and sauteeing...

@bigmarky You know, never made a quesadilla, but will. Thanks for the instructions. Your nuggets (sounds tasty) also made me think-- my kid eats fish sticks and frozen french fries; we should eat them, too, they're delicious. Could add a romaine salad or cherry tomatoes and call it done...

@me4christ Yeah, TJs is my every day microwave lunch (except when I run out, which is mildly dreadful). I was saying, I will look at the dinner options as well. Thanks.

@gemzworld29 There is so much here and it sounds so good, thank you! >>grilled cheese with fancy cheese and lunch meat and sourdough bread (paninis) served with store bought tomato and bell pepper soup, Done, I have a panini grill. OK, so-- grilled cheese, boxed tomato soup. Maybe the next...

@blueangelspirit Will do the pork-- thank you so much for the recipe. You know, we'd made salmon with olive oil, maple syrup, and fresh rosemary so many times it was like a staple. Then after a couple years we got tired. I need to come up with a new marinade and revive the salmon/fish dinner...

@machia My family's high maintenance enough (it's complicated) that there's no weekend reprieve for cooking catchup right now but I am thinking through your tips and wondering what I can freeze when there's time to cook "for real." Thanks for these concrete tips, will try to use them.

@sorrymom That sounds good. I could see adding some feta and calling it dinner with bread. Could do this really fast if we didn't plan on leftovers and used some frozen veg. Thanks.

@pintobean My husband would totally go for bread and cold cuts, like totally. Will do this. I could also see us sauteeing fish fillets or cutlets, maybe like with lemon and capers? I'd just have to flour them in the morning so I don't come home and give up. Thank you very much.

@troybreighton Googling and it sounds good. I could see recreating your tonight's dinner-- thank you!! My kid likes spaghetti. I'm not sure why we don't eat it more. We should and maybe will.

@steinbeck Weekends aren't any easier for me right now but I love the reminder of simmer sauces. Thanks, will check at the grocery. Had forgotten about Greek salads, will think about that, too. Enough feta, some bread and a glass of wine and we'd call it an elegant dinner. Thanks!
